At the turn of the twentieth century, German research scientist D. P. Hanig published a map of the tongue. It illustrated the tongue perimeter and the intensity of sensitivity to four basic sensations: sweet, salty, bitter, and sour. The original drawings show clearly that the entire perimeter of the tongue was sensitive to all flavors but that certain areas had greater sensitivity to one of the four specific sensations.
From that first map evolved the simple tongue map seen in textbooks across the country. No longer were the tastes perceived around the entire tongue. Instead, the sensation of bitter was focused in the back of the tongue, sweet on the tip, salt on the front sides, and sour on the back sides.
If you've ever tried to experiment with taste based on this map, you'll know right away that it's false. You taste things throughout your entire mouth. The modern tongue map is now widely refuted.
